Functional properties of protein concentrates of KB6 kenaf (Hibiscus cannabinus) seed and its milky extract

Kenaf seed meal protein concentrate (KSPC) and lyophilized kenaf milky extract (KSMEPC) were obtained via alkaline extraction. The proximate compositions, amino acids functional properties of both concentrates compared. KSPC was found to be significantly higher in protein, essential non-essential but, lower lipid carbohydrate contents than KSMEPC. solubility, water absorption capacity denaturation temperature KSMEPC similar. However, had oil capacity, foam stability, a emulsion property KSPC. heat coagulability coagulation the not different. But, increased as concentration from 4 20%. This study showed that may considered potential ingredient food products like tofu, meat extender, butter mayonnaise.
